Mullah Tagaliyya (ملاح تقلية) is one of the most popular and beloved Sudanese stews. The word “Tagaliyya” comes from the Arabic word “taqliya”, meaning fried, because the dish starts by frying onions and meat together to build a deep, rich flavor.
