Okra

Okra is a green, edible pod vegetable widely used in Sudanese cooking. It is the main ingredient in Mullah Bamya (Okra Stew) and Mullah Bamya Mafrouka (Mashed Okra Stew).

In Sudanese dishes, okra is typically:

• Chopped or mashed

• Cooked with meat (usually beef or lamb), onions, garlic, fresh green fennel and spices.

• Seasoned with spices such as coriander, chili, and sometimes peanut or sesame paste

Okra gives the stew a slightly slimy, thick texture, which is characteristic and prized in Sudanese cuisine.
