Kamonya

Kamonya (كمونية) is a popular Sudanese dish made from beef or lamb liver, often including kidneys or other offal, cooked with onions, garlic, and a blend of spices such as coriander, chili, and black pepper.

The liver is usually fried first to enhance flavor and then simmered in a rich, spicy sauce, giving it a tender, savory, and slightly tangy taste.
